      <title>Grilled Cheese Nights</title>

The reality is, Green Goddess is a state of mind.&lt;br /&gt;
&lt;br /&gt;
After (re)discovering Green Goddess several years ago, we&amp;rsquo;ve been obsessed with the bright, fresh combination of green herbs, garlic, and lemon that make up the dressing, and have been inspired to add it to just about everything, to the point that we even took Green Goddess and herbs and rolled them up in rice paper to make Summer Rolls. Spring rolls. Grain bowls. Zucchini noodle pasta.&lt;br /&gt;
&lt;br /&gt;
Sandwiches.&lt;br /&gt;
&lt;br /&gt;
Specifically, a grilled cheese sandwich.&lt;br /&gt;
&lt;br /&gt;
We made a fresh herb pesto with the standard Green Goddess herbs, plus a sneaky handful of kale, and now keep this Green Goddess Pesto as a staple in our refrigerator. We spread the pesto onto slices of La Brea Bakery&amp;lsquo;s Whole Grain Gluten-free Bread, added Monterey Jack cheese, feta cheese for some tang, baby spinach for added greens, and of course, this wouldn&amp;rsquo;t be The Delicious Life if there weren&amp;rsquo;t avocado.&lt;br /&gt;
&lt;br /&gt;
Make this Green Goddess Grilled Cheese. Hell, make any grilled cheese because April is National Grilled Cheese Month, so we have almost two more weeks to celebrate.&lt;br /&gt;

As you know, we are currently in transition mode. We&amp;rsquo;re fully moved into our new house, but it doesn&amp;rsquo;t quite feel like home, and there&amp;rsquo;s still a lot to be done to fix it up. Earthbound Farm asked me to develop a recipe using their Kale Italia salad blend, and I decided that using the pre-mixed, pre-washed greens as the base for a simple recipe would be another good way to ease back into cooking. Pesto is a great option when you want to turn a lot of fresh greens into a manageable volume of food. Of course, it&amp;rsquo;s the same amount of greens overall &amp;ndash; it can just be consumed in fewer bites (and eating an entire box of greens in one sitting can be a rather daunting prospect.) I&amp;rsquo;ve been successful making pesto from kale, as well as from arugula. Mizuna, with it&amp;rsquo;s tangy, mustardy flavor didn&amp;rsquo;t feel like much of a stretch as a pesto candidate. That left radicchio as the only question mark from the Kale Italia blend, and I decided it would be a low risk experiment to give it a try.&lt;br /&gt;
&lt;br /&gt;
The result was excellent &amp;ndash; a bright, zingy pesto full of flavor. We tossed it with some gnocchi, fresh mozzarella, and cherry tomatoes for an easy, summery weeknight dinner. I&amp;rsquo;ve pilfered oodles of muffin tops in my day, leaving behind only the stumpy muffin cores. No shame.&lt;br /&gt;

The muffins are moist and soft in the middle with a slight bit of chewiness around the edges of the muffin top. Throw in the texture from the sugar granules, and it&amp;rsquo;s a perfect bite.&lt;br /&gt;
&lt;br /&gt;
The muffin tops remind me of snow-capped mountains. They&amp;rsquo;re are as close to snow as I prefer to come.&lt;br /&gt;
&lt;br /&gt;
I hit the jackpot when I recently snagged a big bundle of discounted bananas. Beat up and tired, practically free, and perfect for banana muffins, banana bread, and banana smoothies. When I saw Nikki&amp;rsquo;s muffins, I knew I had to try a version of her recipe with my banana bounty.&lt;br /&gt;
&lt;br /&gt;
I&amp;rsquo;m sure everyone knows this tip, but you can peel overripe bananas, break them into chunks, place in a Ziplock, and freeze. That way anytime you need ripe bananas for baking or smoothies, you&amp;rsquo;re set.&lt;br /&gt;
&lt;br /&gt;
It&amp;rsquo;s an easy, no mixer recipe, with the perfect amount of chocolate to satisfy your chocolate cravings without being too intense for a breakfast muffin, and the chocolate dominates the banana flavor. No complaints there.&lt;br /&gt;
&lt;br /&gt;
There&amp;rsquo;s both cocoa powder and mini chocolate chips in the muffin batter and although you can use regular-sized chips, I love mini chips in muffins because they melt much more evenly and don&amp;rsquo;t sink to the bottom as easily.&lt;br /&gt;
&lt;br /&gt;
The recipe makes 13 or 14 muffins, or 1 dozen plus a mini loaf. I love my mini loaf pans for that extra little bit of batter that I hate throwing out, but refuse to dirty another muffin pan for a couple muffins. The loaf pan fits perfectly next to the muffin pan on the same oven rack so everything bakes evenly.&lt;br /&gt;

And these are the Russian white nights, when the sun seemingly never sets.&amp;nbsp; Last week I travelled to Russia. They call St Petersburg the Venice of the North. Although I&amp;rsquo;m not all too sure why. Like Venice it is a magnificent city. But beyond that - Venice is a small, sleepy town, where everyone knows everyone and the background hum of motorboats is comforting and familiar. St Petersburg, on the other hand, is a city &amp;ndash; in the truest sense of the word. It is dramatic. The palaces, the boulevards, the rush of cars, the fading gold and the black dirt. The Metro stations are ballrooms with malachite pillars and splendid statues &amp;ndash; grand enough to host a party for a thousand. The markets &amp;ndash; all white pillars and dusty floors &amp;ndash; sell caviar by the kilo. Blinding bright white light, cold wind, black bread and honey cake &amp;ndash; oh, the heavenly honey cake! -, shimmering gold leaf, ostentatiously vaulted ceilings and garden follies &amp;ndash; is St Petersburg. Fountains, semiprecious stones and babushkas &amp;ndash; these are my memories of a foreign and electrifying city. My memories &amp;ndash; of the other side of the looking glass.</description>

I had a new experience today. Okay, so not a totally new experience, but one I&amp;rsquo;ve only had once in my life prior, and that was about ten years ago. I drove my husband&amp;rsquo;s F-150. Now, I drive a fairly small car, and while I learned to drive on my mom&amp;rsquo;s Dodge Caravan back in the early nineties, all of my vehicles have been cars. Also, somehow the fact that the truck is a manual freaked me out even more, even though the cars I&amp;rsquo;ve driven for the last 12 years have been manuals as well. For some reason that big hulking truck freaked me out (okay, I&amp;rsquo;m exaggerating. It&amp;rsquo;s not like it&amp;rsquo;s on a lift or anything, but compared to my little Volvo it seems gigantic). Add to that the fact that our driveway is a fairly steep incline and that the roads were wet today and you had one freaked out short lady maneuvering a truck through the streets of our small town, but I didn&amp;rsquo;t have a choice so I rolled with it (quite literally). And I survived. And even parked the truck successfully in the garage. But you guys should pray for me, because my car is in the shop and you don&amp;rsquo;t even want to know how much Volvo repairs cost. But that&amp;rsquo;s beside the point.&lt;br /&gt;
&lt;br /&gt;
One thing about driving that truck in small town Tennessee that made me laugh is that it&amp;rsquo;s not too unusual around here to see girls driving trucks and honestly it&amp;rsquo;s kind of surprising that it&amp;rsquo;s only my second time. I hate Southern stereotypes, but you guys, there are a lot of people with trucks in these parts. Another thing you see a lot of? Front porches. Honestly, one of the things that I don&amp;rsquo;t like about my house is no front porch. It&amp;rsquo;s more of a stoop&amp;hellip;.not something on which you can sit. I kind of miss the front porch evenings at my parents&amp;rsquo; house, sitting in the wooden rocking chairs and waving at the people that drive by&amp;hellip;some of whom you know, others you&amp;rsquo;ve never seen in your life. Everyone waves just the same, no matter.&amp;nbsp; I know front porches and front porch sitting aren&amp;rsquo;t exclusive to the South&amp;hellip;.but that feeling of community is not something that you find everywhere.       <title>It’s always healthy</title>

People are always asking me what I eat&amp;nbsp; during the course of the day.&amp;nbsp; I thought I would start sharing some of my go-to meals with you.&amp;nbsp; I love to eat lunch in my kitchen.&amp;nbsp; If at all possible, I will come home from wherever I am and make myself lunch. This lunch bowl is my favorite thing to have for lunch.&amp;nbsp; When I come home from the market, my rule is that I have to wash and/or cook a lot of vegetables before I put them in the fridge.&amp;nbsp; Because of that, this lunch bowl is an easy go-to meal for me &lt;a style=&quot;color: #333333; text-decoration: none;&quot; href=&quot;http://www.executivesolutions.hk/china-virtual-office.html&quot;&gt;china virtual office&lt;/a&gt;.&lt;br /&gt;
I vary the contents depending on what I have in the fridge at the time, but it always contains a lot of greens, some cooked veggies, nuts or seeds and fruit. I like a good variety of textures and flavors. As a rule of thumb, the largest percentage in the bowl is made up of dark greens. I always include something crunchy and something sweet. I also like something warm to play against all of the cool greens. Sometimes I&amp;rsquo;ll make a vinaigrette or sometimes I&amp;rsquo;ll just squeeze a lemon on top and drizzle a good oil over it all with a sprinkle of sea salt. This particular bowl contained spinach and mache for the leafy greens. I also used some mustard micro greens. I buy whatever micro greens are available at the market. Micro greens have all of the nutrition of the larger variety, but they have even more concentrated nutrients. Also, they are just plain pretty. When I was in cooking school, we used them to garnish plates; now, I use them for the great nutritional punch they pack.&lt;br /&gt;
I almost always use something red in my salad. As a general rule, red foods help nourish the blood. Beets help calm the mind, soothe irritability and help relieve constipation. This week felt like turning a corner.
